It took many years for the Bistro to be brought to fruition. Hearing our guests’ requests for food on site, the return of Philippe and Julie’s eldest son Romain from his culinary studies in France launched this new phase. It was decided to revive the main level of the Vintage Winery, which was originally used as a carriage house in the 1800s. With our philosophy about food, wine, and spirits and the old-world character of our 19th century building, it was a natural fit to model our dining experience after a traditional French bistro.
During the mid-1800s on the street corners of Paris, bistros provided their patrons with a quick, nourishing meal to help sustain them throughout their long workdays. A bistro was a friendly meeting place to grab a bite to eat and catch up with family and friends in a warm and inviting atmosphere. Bistros were known to offer simple, home-style French meals at an affordable price and within a reasonably short time frame; that means no reservations and less waiting! We hope to recreate this warm and welcoming space for our customers to enjoy a light lunch or snack with friends over a glass (or two) of Wollersheim wine or a distillery cocktail.
In the spring of 2019 plans were drawn up and construction began on a full-scale commercial kitchen adjacent to our wine production area, while the Vintage Winery was repurposed for seating, and the Bistro was officially open for service in October 2019.
All the food served at the bistro is made from scratch with as many locally sourced ingredients as possible, from the eggs and flour to the meats and vegetables. Wollersheim Winery, Distillery, and Bistro provides a truly unique experience to enjoy a glass of wine, a cocktail, and a French baguette all in the location where it was made and in a beautiful and historic setting.
